Sushi (寿司 or 鮨) is the most famous Japanese food outside of Japan, and one of the most popular dishes among the Japanese. In Japan, sushi is usually eaten no only on a daily basis but on special occasions such as celebrations. In the past, sushi was more like pickled fish preserved in vinegar but now sushi can be defined as a dish containing rice that has been prepared with sushi vinegar. There are many different types of sushi and some popular ones are: Inarizushi, tako, squid, crab, salmon, ikura, tamagoyaki, and many more.
A must try in Japan is conveyer belt sushi where you simply reach to grab the sushi you like that is passing by on the conveyer belt. Ones I recommend that won't put a dent in your pockets are Sushiro and Kurasishi.
