This course takes a practical look at how automated cooking systems are changing the way kitchens operate and what that means for grease, ventilation, and cleaning. We will break down how these systems affect exhaust systems, which serve as the last line of defense, and examine the real-world hazards that come with automation, including unexpected movement, electrical and control system risks, and unattended operation.
We will also connect these topics to key industry standards such as those from NSF and UL 763, as well as their relationship to codes developed by the National Fire Protection Association and International Code Council. The goal is to give a clear and practical understanding of how to manage risk, maintain compliance, and support fire and life safety as kitchen technology continues to evolve.
