Tis’ the season to eat the MOST delicious things of the year!! Having dietary restrictions due to living with Hashimotos Disease, I have experienced showing up to family gatherings and having to pass up on my favorite holiday dishes. Talk about having your holiday spirit plummet! I went Paleo a few years ago and it did wonders for my health. But then I discovered that eggs and coconut were an issue for me too. Yet another let down, because I quickly discovered that grain free baked goods without eggs were pretty much impossible to find. Since then it has been my sole purpose to find a way to make my recipes EXTRA allergen free...even free of eggs. I believe firmly that where there’s a will there’s a way (as long as you are willing to put in some good old fashioned hard work!) and boy oh boy did I find a way!!
