Why do we call it #AlmostVegan?
Manu almost never has a cookbook with him and just uses what he finds. Sometimes we like to use butter to fry onions or have a glass of wine with dinner. With this cookbook, we want to show that cooking vegan can be tasty. But there is nothing wrong if you want to add some cream or other products to your meals.
Who are we?
We are a German/Latvian couple who love traveling as much as possible and spending time with friends and family. This book has been inspired by our years of backpacking around the world and experiencing different cultures through food and local traditions. Kristine has been involved in sports from athletics to national snowboarding and wakeboarding teams ever since she can remember. A healthy lifestyle and a good balance have been a crucial part of her lifestyle for more than 10 years while being a semi-professional athlete. Manu is in love with cooking, but never has as much time for it as he would like. Therefore, we started spending more time in the kitchen, doing what we love.
What inspired us?
Reducing meat and trying a plant-based diet started a few years ago with the awareness of our impact on the environment, vis-a-vis our eating habits. While we are not vegans, growing up in Germany and Latvia with their heavy meat diets encouraged us to find alternatives. Our travels in Asia especially, have shown us wonderful dishes exist without using animal products.
Now that we are in lockdown in Denmark, we have been reflecting on our experiences and feeling nostalgic about the beautiful places we have been fortunate to visit. Having more time on our hands, we started to cook the dishes we enjoyed during our travels, adding our own twist. We are inviting you to take your taste buds on this journey from Latvian countryside bread to Tokyo style ramen.
