The Apartment Micro-Brewery
A jar of tea, a few berries and a place in the cupboard. That's enough of a start.
The Apartment Micro-Brewery helps you choose 1 culture, make your first batch and find a drink you'll want to make again. Then it brings the next feed, bottling day and taking a break into the same kitchen routine. Your cupboard has other jobs.
You'll get Dean's continuous kombucha routine and Cathy's water kefir method, with measured beginner steps and the checks you'll need along the way. Try raspberry, ginger or one of the other flavor ideas on a small chilled portion before committing the whole batch.
Inside the guide:
• A first-drink comparison and equipment checklist.
• A complete small kombucha batch, followed by Dean's continuous brew and a measured repeat-batch method.
• Cathy's water kefir, feeding the grains and making the next batch.
• 8 flavor starting points with amounts and adjustment notes for refrigerated drinks.
• Plain bottling, chilled flavoring and separate instructions for building fizz in suitable bottles.
• Pausing, restarting and troubleshooting.
• An optional ginger bug and fruit soda method.
• A kitchen quick reference, printable reusable batch card and bottle-label template.
• Clickable contents, linked sources, US measurements with metric equivalents and photographs from our kitchen.
Start with one culture. A second drink can wait until you've found your rhythm.
Format: downloadable PDF. Print the reference and batch-card pages when you want them beside the jar.
Homemade fermented drinks can contain alcohol. If avoiding alcohol is essential, choose a drink with reliably established content.
