Here are five essential ingredients that can help you bring authentic Jamaican flavour into your kitchen.
1. Scallion
Scallion is used in many Jamaican dishes, including rice and peas, soups, stews, curries and seasoned meats. Chop it finely or gently crush it before adding it to your food to release more flavour.
2. Fresh Thyme
Thyme gives Jamaican meals their familiar earthy aroma. It works beautifully in brown stew chicken, curry dishes, soups, steamed fish and rice and peas. Fresh thyme is excellent, but dried thyme can also be used when fresh thyme is unavailable.
3. Pimento
Also called allspice, pimento is one of the most recognizable flavours in Jamaican cooking. It can be used whole or ground and adds a warm, slightly sweet and spicy taste to meats, soups, sauces and jerk seasoning.
4. Scotch Bonnet Pepper
Scotch bonnet pepper brings both heat and flavour. You can add the pepper whole for a milder taste or chop it for more heat. Always wash your hands after handling it and avoid touching your eyes.
5. Garlic
Garlic adds depth to almost any savoury Jamaican meal. Fresh garlic can be crushed and combined with scallion, thyme, pimento and Scotch bonnet to create a flavourful base for seasoning meat, fish and vegetables.
A Helpful Jamaican Cooking Tip
For deeper flavour, season your meat ahead of time and allow it to marinate in the refrigerator. This gives the herbs and spices time to blend into the meat before cooking.
