Oh my goodness! I made this recipe for a potluck, and it was wolfed down in no time


Ingredients:

2 large zucchinis

1 large ripe tomato, thinly sliced

2 tbsp olive oil

Salt and pepper to taste

1 tsp garlic powder

1 tsp Italian seasoning

1 cup shredded mozzarella cheese (or any preferred cheese)

Instructions:

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

2. Slice zucchinis into 1/4-inch thick pieces. Brush with olive oil on both sides and place on the baking sheet.

3. Sprinkle with salt, pepper, garlic powder, and Italian seasoning on both sides.

4. Top each zucchini slice with a thin tomato slice.

5. Sprinkle shredded mozzarella cheese over the tomato slices.

6. Bake for 12-15 minutes until the cheese is melted and lightly browned.
