Some meals just hit that sweet spot between easy and comforting, and this Farmhouse Bourbon Chicken is one of them.
It has a slightly sweet, savory sauce with just enough tang and warmth from the ginger and black pepper, and it comes together in one skillet without a lot of fuss.
Serve it with baked potatoes and broccoli with cheese, and you’ve got a simple, hearty supper that feels like a full meal without requiring a pile of complicated ingredients. This is the kind of dinner I like for a weeknight when everyone is hungry and I want something dependable, filling, and family-friendly. For us, this recipe makes leftovers for us.
Why This Meal Works
The chicken cooks quickly, the sauce is made with basic pantry ingredients, and the sides are about as easy as they come.
The biggest trick is simply starting the baked potatoes first.
While they’re in the oven, you can make the chicken and broccoli, and everything should be ready around the same time.
That means you’re not juggling three complicated recipes at once.
Farmhouse Bourbon Chicken
Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs, cut into bite-size pieces
- 1 tablespoon olive oil
- ½ cup brown sugar
- ⅓ cup soy sauce
- ⅓ cup apple juice
- 2 tablespoons apple cider vinegar
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes, optional
- 1 tablespoon cornstarch
- 2 tablespoons cold water
Instructions
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken and cook until lightly browned on the outside.
In a bowl, whisk together the brown sugar, soy sauce, apple juice, apple cider vinegar, garlic, ginger, black pepper, and red pepper flakes if using.
Pour the sauce over the chicken.
Reduce the heat and simmer for approximately 15–20 minutes, stirring occasionally, until the chicken is cooked through and the sauce has reduced slightly.
In a small bowl, combine the cornstarch and cold water and stir until smooth.
Pour the cornstarch mixture into the skillet.
Stir and simmer for another 2–3 minutes, until the sauce thickens and coats the chicken.
Taste and adjust the seasoning if needed.
Baked Potatoes
Ingredients
- 4–6 russet potatoes
- Olive oil, optional
- Salt
- Butter, for serving
- Black pepper, for serving
Instructions
Preheat the oven to 425°F.
Scrub the potatoes and dry them well.
Pierce each potato several times with a fork.
Rub lightly with olive oil and sprinkle with salt if desired.
Place directly on the oven rack or on a baking sheet.
Bake for approximately 45–60 minutes, depending on the size of the potatoes, until they are tender all the way through.
Split open and serve with butter, salt, and black pepper.
Broccoli with Cheese
Ingredients
- 1–2 lbs broccoli florets
- 1–1½ cups shredded cheddar cheese
- Salt and black pepper, to taste
Instructions
Steam or boil the broccoli until tender but not mushy.
Drain well.
Season lightly with salt and black pepper.
Sprinkle the shredded cheddar cheese over the hot broccoli.
Cover for a minute or two and let the heat melt the cheese.
You can also place the broccoli in a baking dish, sprinkle with cheese, and put it into the oven for a few minutes while the potatoes finish.
How to Time Everything
Start with the potatoes because they take the longest.
Once they have about 25 minutes left, begin the bourbon chicken.
When the chicken is almost finished, steam the broccoli and add the cheese.
That way everything comes together at about the same time without feeling rushed.
A Few Easy Variations
You can make this meal fit what you have on hand.
For the chicken, you can use either breasts or thighs.
If you don’t have apple juice, you can substitute a little more broth or water, but the apple juice adds a nice bit of sweetness to the sauce.
If your family likes more heat, add a few extra red pepper flakes.
If you prefer a milder version, leave them out completely.
And if you have leftover chicken, it reheats well for lunch the next day.
Farm Wife Tip
This is one of those meals where a little planning makes supper feel much easier.
Get the potatoes in the oven first, then use that baking time to get the rest of the meal ready.
Simple sides, one skillet, and a sauce that does most of the work for you.
That’s my kind of weeknight supper.
Farmhouse Bourbon Chicken with baked potatoes and broccoli with cheese is simple, hearty, and full of flavor.
It’s a good reminder that supper doesn’t have to be complicated to feel like a complete meal.
A tender baked potato, cheesy broccoli, and that sweet-savory chicken all on one plate?
That’s a dinner I’d happily make again.
