Some casseroles are just made for busy family nights, and this is one of those easy meals that can quickly become a family favorite. It’s warm, filling, full of familiar taco flavors, and simple enough that even picky eaters can usually find something to love.
I also like that it gives you that cozy casserole feel without being overly heavy. Lean ground beef or turkey, beans, vegetables, rice, salsa, Greek yogurt, and just enough cheese make it a hearty, balanced supper that still feels like comfort food.

Ingredients
- 1 lb lean ground beef or ground turkey
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning, or 2 tablespoons homemade taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup frozen corn
- 1 can diced tomatoes, drained
- 1 cup salsa
- 2 cups cooked brown or white rice
- 1 cup shredded cheddar or Mexican-blend cheese
- ½ cup plain Greek yogurt
- Salt and pepper to taste
Directions
- Heat oven to 375°F and lightly grease a 9×13-inch baking dish.
- Brown the ground beef or turkey with the onion and bell pepper. Drain any excess grease.
- Stir in garlic and taco seasoning and cook for another minute.
- Add black beans, corn, tomatoes, salsa, cooked rice, and Greek yogurt. Stir until everything is well combined.
- Spread into the prepared baking dish and sprinkle cheese evenly over the top.
- Bake uncovered for 25–30 minutes, until hot and bubbly.
Farm Wife Tip
This is an easy make-two meal. Double the recipe, bake one for supper, and assemble the second in a freezer-safe pan. Cover tightly, label, and freeze until you’re ready to serve it.
Thaw in refrigerator and to cook from thawed, bake at 375°F for about 30–35 minutes.
Freezer meals maintain best quality if used within 3 months.
For an easy family supper, serve it with shredded lettuce, chopped tomatoes, extra salsa, or a simple side of fruit.
