Simplifying Life in the Kitchen: Why Meal Plan Monday Makes Such a Difference

There are seasons when life just feels full.

Farm work, family schedules, appointments, school activities, sports, errands, laundry, bills, meals - - it all adds up. And while we may not be able to make every part of life simple, I do think we can find little ways to make our days run more smoothly.


One of the biggest places I’ve found that simplicity helps is in the kitchen.


Meal Planning Does Not Have to Be Complicated

When some people hear “meal planning,” they picture a perfectly organized refrigerator, hours of Sunday meal prep, labeled containers, and every meal mapped out down to the last ingredient.

That does not have to be what meal planning looks like.

For me, meal planning is really about one thing:

Making the decision before I’m tired, hungry, and standing in the kitchen wondering what in the world we’re having for supper.

That little bit of planning ahead can make such a difference.

A simple meal plan might just mean writing down five or six supper ideas for the week.

It might mean checking the freezer first and building meals around what is already there.

It might mean cooking extra ground beef tonight so tomorrow’s meal is halfway done.

Or making two casseroles instead of one and putting the second in the freezer.

None of those things are complicated, but they can make a busy week feel much more manageable.


Start With What You Already Have

Before making a grocery list, I like to look through the pantry, refrigerator, and freezer.

You may already have the beginning of several meals sitting right in front of you.

Ground beef can become tacos, spaghetti, a casserole, sloppy joes, or a skillet meal.

Shredded chicken can turn into soup, sandwiches, enchiladas, wraps, or a quick pasta dish.

A few vegetables, potatoes, rice, pasta, broth, canned tomatoes, or beans can go a long way when you start looking at them as meal components instead of individual ingredients.

Using what you already have can also help reduce food waste and keep the grocery bill from getting out of hand.


Make Extra When It Makes Sense

One of my favorite ways to simplify meals is to make a little extra while I’m already cooking.

If I’m browning ground beef, I can brown an extra pound.

If I’m cooking chicken, I can make enough to shred for another meal.

If I’m making a casserole, I can often make two just as easily as one.

Those small amounts of extra effort can save a surprising amount of time later.

You do not have to spend an entire weekend filling your freezer to make freezer meals work for you.

Sometimes building your freezer a meal or a component at a time is much more realistic.


Give Yourself Easy Nights

Not every supper needs to be a big homemade production.

Some nights can be sandwiches and soup.

Some can be burgers and macaroni salad.

Some can be baked potatoes with toppings.

Some can be leftovers.

Some can come straight from the freezer.

Simple meals still feed your family.

The goal is not to impress anyone. The goal is to get supper on the table without making yourself crazy in the process.


Meal Plan Monday Can Set the Tone for the Week

Taking even ten or fifteen minutes on Monday to think through meals can remove a lot of stress from the rest of the week.

Ask yourself:

  • What do I already have?
  • What needs used first?
  • What nights are busiest?
  • Which meals can make leftovers?
  • Is there anything I can double or prep ahead?
  • Where do I need an easy meal?

That is really all Meal Plan Monday needs to be.

Simple. Practical. Flexible.
