Hello lovelies!
There are days when you want dessert… but not a project. Not a sink full of dishes. Not a long list of ingredients. Not something that “might” turn out.
This is that recipe.
Soft, buttery shortcakes, sweet strawberries, and a cloud of whipped cream—simple, reliable, and exactly what you expect it to be. No guessing. No stress. Just a dessert that works.
Why You’ll Love This
- Uses basic pantry ingredients
- Comes together in about 30 minutes
- No complicated steps or techniques
- Works the first time—even if you’re tired
Ingredients
For the Strawberries
- 1 lb fresh strawberries, sliced
- 2–3 tbsp sugar
For the Shortcakes
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 2 tbsp sugar
- ½ tsp salt
- ½ cup cold butter, cubed
- ⅔ cup milk
For the Whipped Cream
- 1 cup heavy cream
- 2 tbsp sugar
- 1 tsp vanilla extract
Instructions
1. Prep the Strawberries
Add sliced strawberries and sugar to a bowl.
Stir and let sit while you make the shortcakes.
→ They’ll soften and create their own syrup (no extra work needed).
2. Make the Shortcakes
Preheat oven to 425°F.
In a bowl, mix flour, baking powder, sugar, and salt.
Cut in the cold butter until crumbly (it should look like coarse crumbs).
Pour in milk and stir just until combined. Don’t overmix.
Drop the dough into 6 rough mounds on a baking sheet.
Bake for 12–15 minutes, until lightly golden.
3. Make the Whipped Cream
In a bowl, whip the cream, sugar, and vanilla until soft peaks form.
(Store-bought works too if you’re low energy.)
4. Assemble
Slice a shortcake in half.
Spoon strawberries over the bottom.
Add whipped cream.
Top with the other half.
