Ingredients
For the chicken:
- 2 lb ground chicken
- 1/2 red onion, diced
- 7 cloves garlic, minced
- 1 cup parsley
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 1 tsp paprika
- tsp cumin
- 2 tsp Salt
- 1 tsp pepper
For the Greek salad topping:
- 1 cup chopped tomatoes
- 1 cup chopped cucumber
- ¼ cup thin sliced red onion
- ¼ cup feta cheese
- 2–3 tbsp olive oil
- 1–2 tbsp red wine vinegar
- Salt + pepper
Optional (traditional but skip if you don’t like them):
- Kalamata olives
Instructions
- Preheat oven to 375°F
- In a bowl, mix chicken, garlic, spices, salt, pepper, and olive oil
- Spread onto a lined sheet pan (or shape into logs)
- Bake for 20–25 minutes until cooked through
- Broil 2–3 minutes for crispy edges
- While that cooks, mix all Greek salad ingredients in a bowl
- Warm pita
- Fill with chicken, top with Greek salad, and finish with tzatziki
