Simple Meal Prep Lunch Idea
Ingredients:
- 2 lb ground turkey
- 3 bell peppers
- 1 zucchini
- 1.5 cup dry jasmine rice
- 1 bush of cilantro
- 1.5 limes
- Salt to taste
- 3 cups of chicken bone broth
- Seasonings:
- Butt rub seasoning
- Urban Accent Seasoning
- All purpose seasoning
Ground Turkey Instructions:
- In a frying pan, brown 2 lbs ground turkey
- Add Butt rub and Urban Accent Seasoning (I just eye ball how much, I don't measure- the two of these seasonings together are to die for!)
Jasmine Rice Instructions:
- Bring 3 cups of chicken bone broth to a boil
- Add 1.5 cups of jasmine rice
- Bring stove to a simmer, cover the pot for 22-24 min (until rice is soft and all liquid is absorbed)
- Chop cilantro up really fine (or use Kitchen aid hand blender, definitely saves you time)
- Once rice is done stir in cilantro, desired amount of salt, and squeeze 1.5 limes in rice and stir
Vegetables Instructions:
- Chop bell peppers and zucchini to your liking
- Saute in the same pan you used for ground turkey, you will not have to use any oil
- Once soft add All purpose seasoning
Prep:
- Add 6oz of ground turkey in 5 glass containers (you will have extra- I use the extra through the week for dinner)
- Divide veggies up between the 5 containers
- Add 1/2 cup of rice to each container. (There might be extra rice, again you could use the extra for dinner during the week)
- Enjoy!! Simple and delicious!
