E-book

How much does cultivar really impact the way a coffee roasts and tastes? For years, terroir and processing have dominated the conversation, while cultivar remained an afterthought. Cultivar: A Practical Guide for Coffee Roasters challenges that narrative, offering a detailed exploration of how genetic differences shape coffee’s flavor and roast behavior.

To answer this question, I dedicated 606 days to rigorous experimentation—conducting 309 roasts across 31 coffees from 6 farms in 4 different coffee-producing countries. Backed by 16 years of roasting experience and 12 years as a coffee consultant, this book is the culmination of my hands-on research, cupping sessions, and analysis. Cultivar is a practical resource for coffee roasters looking to refine their approach, understand the unique roasting needs of different varieties, and take their craft to the next level.

Deepening my dive into coffee roasting.

I appreciate the writing style and clarity of R. Hoos. Considering the cultivar up til now has not been something on my radar. I am going back to reread this book, as I always pick up additional nuggets on the second pass.

A Solid Home Base for Exploring Cultivars

I've long been a fan of any content that I can find from Rob. This is no exception. I took part in one of the roasting iterations that were used to get all the content for this book, so it was especially fun to see the end result. I'm planning on getting the Field Notes book soon as well. Rob does an incredible job to teach and lay building blocks without giving too much information, which would water down the learning process we all must take. This book gives enough guidance to not be totally lost in the endless forest of roasting, but in fact, a home base to explore from. Thanks Rob for giving people just the right amount of tools to cultivate creativity!

Quite Informative

I like Rob's stuff. I wasn't sure if thing would be beneficial to my business but glad I was wrong. The information is practical and usable. I do roast on a air roaster which requires a bit of translation (drum to air) but overall happy with the information that he provides.

Great for experienced roasters

The first half was, as always, a good read.

Then the tips and tricks with time stamps and little physicochemical evidence was not so entertainment or ilustrative. the advice proposed wasn't really helpfull and there isn't translation for diferent cases ie. 1Kg - 5Kg - 10Kg - 20Kg - etc.

Not recomended for new roasters, you NEED a background to understand and compare the information exposed
