
From Inflammation to Vitality: My journey to healing through a whole food plant-based diet.
This living document provides my experiences with various health issues caused, I believe, by an unhealthy meat-based diet. I list the various health issues that began in my youth and then continued into my adult life. My difficulties with health ended after I transitioned from a meat-based to a whole food plant-based diet. I strongly recommend daily consumption of fermented foods, i.e. sauerkraut, and kimchi. These foods, along with healthy vegetables, ensure a healthy gut microbiome. Thus, optimizing the systems of immunity and the vagus bridge between the digestive tract and the brain.
