300 original practice questions, every one written from the exam's published content areas, with an explanation for every wrong answer as well as for the right one.

This is a question bank, not a textbook. It is built for the stage of study where the course or the reading is done and what is left is finding out which answers are wrong, and why.

How the book is organised

  • A 20-question diagnostic that returns a study order rather than a score, weighted by the published content areas, so a gap in the 18.75 percent Safe Preparation and Cooking of Food area outranks a gap in the 10 percent Management of Food Safety Practices area.
  • One chapter per content area: Management of Food Safety Practices; Hygiene and Health; Safe Receipt, Storage, Transportation and Disposal of Food; Safe Preparation and Cooking of Food; Safe Service and Display of Food; Cleanliness and Sanitation; Facilities and Equipment. The diagnostic and both practice exams are drawn at the published weights.
  • Questions in sets of ten, with the answers starting on a later page, so reading ahead by accident is not possible.
  • Two practice exams of 90 questions each, the full length of the real exam (80 scored and 10 unscored pilot questions), mixed in the published proportions. Time yourself against the real exam's two hours.
  • A 40-item second-best-answer drill, a misconception index, a content-area cross-reference and a glossary.

What is different about the explanations

Most prep books explain the correct answer and leave the other three alone. Every explanation here does four things: why the key is right; why each wrong option was tempting, naming the misconception behind it; the detail in the question that rules that option out; and the one line that separates the key from the next-best option. On a food safety exam the miss is rarely ignorance. It is a real temperature or time taken from the wrong rule, or excluding a worker where the rule is to restrict.

Written to the published content areas

Every question traces to one of the seven content areas published for the ServSafe Food Protection Manager Certification Examination. The explanations draw on public U.S. government sources: chiefly the FDA Food Code 2022 and its Supplement, with FDA's employee health handbook, its HACCP manual for operators and the Bad Bug Book, and the federal sanitary transportation rule. No ServSafe course material is used, and no question is taken from, or modelled on, any real exam question. The diagnostic, the two practice exams and the drill draw on the same bank, so 300 is the number of distinct questions in the book rather than a count of repeats.

State and local codes

The Food Code is a model code, and each state and locality adopts its own edition and may change it. The questions follow the national model; at work, follow your local regulatory authority.

No book can promise a result. This one shows which answers are wrong, and what the wrong answer was built out of, before the exam asks.
