California Common beers most often utilize Northern Brewer hops throughout. The Big Dogg loves his Magnum bittering hops. He feels they lend more support to the beer's malt flavor.

Makes 5 gallons

For the all-grain version, we recommend a mash temperature of 153°F. For the lager yeast used in this recipe, we recommend a fermentation temperature near 60°F. If you use an ale yeast, we recommend a fermentation temperature in the 63–65°F range.

For Extract Brewing: Substitute about 6.5 lbs Light Dry Extract or 7.25 lbs Ultralight Liquid Extract and steep the specialty grains.

Keep in mind this is a fun hobby to be enjoyed. You can make it as technical as you wish. The big fella prefers to keep it simple by letting the equipment do the job. Big DADDY prescribes to the fact that clean and sanitary is more important than technical data. Relax, grab a beer and have a great brew day.
