Ingredients:


  • 1 pound (450g) pasta
  • 2 cups (about 500g) boneless, skinless chicken breasts, diced

  • 1 cup (240ml) cherry tomatoes, halved
  • 1/2 cup (120ml) pine nuts
  • 2 cups (60g) fresh basil leaves, packed
  • 1/2 cup (120ml) extra-virgin olive oil
  • 1 cup (100g) grated Parmesan cheese
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • Grated zest of 1 lemon
  • 1/2 cup (120ml) chicken broth


Method:


1. Cook the Pasta:

  • Boil salted water, cook pasta according to package instructions. Drain and set aside.

2. Season and Sauté Chicken:

  • Season chicken with salt and pepper. Sauté until browned and cooked through. Set aside.

3. Prepare Pesto Sauce:

  • In a food processor, blend basil, pine nuts, Parmesan, garlic, lemon juice, and zest until coarsely chopped. Slowly add olive oil.

4. Combine and Sauté:

  • Sauté cherry tomatoes, add cooked chicken, pour in chicken broth, and simmer.

  • Add cooked pasta to the skillet. Toss with prepared pesto sauce until evenly coated.
