Ganache sooo good !

This is my 2nd purchase from Manuela. I obviously love her Passion for Baking app Love Manuela. The ganache recipes are excellent, absolutely superb. Every time I use her ganaches for a cake, people ask me what did I do & use? Did I buy the cake or make it ??? Is this really homemade? No … they are Manuela’s recipe with my personal twist, all home made with lots of love and effort. Manuela uses French Valrhona & I use Callebaut Belgium chocolates bc I’m in the United States. The high quality chocolates are exceptional although Valrhona is considered superior, more $$ here. This emphasis is to convey that her ganache recipes are interchangeable within certain higher fat and cocoa brand ingredients and chocolate choices. I don’t recommend using regular mediocre store bought chocolates at all ever. BUT in a pinch … I have resorted to the lower quality/fat chocolates. Her recipes are that good . They will still work “sometimes” and taste amazing. The usage of freeze dried fruits, soaking bananas and tea leaves in heavy cream were a surprising eye opener. Huge flavor bomb !!! Sometimes I’ll substitute exotic fruits like guava, lychee, dragon fruit, jackfruit , or young coconut for the fruit and curd fillings. However her base ganache recipes are the foundation for the torte layering in my cakes. The instructions, guidance, videos , tutorials, and suggestions are detailed & very well written with an abundance of clarity that a novice baker can pull off. The knowledge from experience is obvious as you come across more
Challenging recipes . If you have the sponge cake EBook or the app… the ganache Ebook is a MUST . The pricing is unbeatable but best of all , the recipes are top notch . I don’t care for recipes that need fussy non staple pantry ingredients such as: agar agar, guar gum, pectin NH , yellow pectin, gelatin sheets , gelatin powders, dye colors, glucose, and invert sugars. These can be very expensive & not accessible at all!!! There may be a few recipes that need invert sugar or glucose… but most don’t require it. This was really important to me! The energy & time spent searching for a specific item and hard to locally find ingredient can be frustrating. So I really try to avoid bakers and recipes that involve complex ingredients. Manuela’s ganaches supersede my expectations . The recipes are straightforward and just delicious. Don’t take my word for it … buy it and try it . You won’t regret it .
