What every storage crop wants, and how long it will give you in return.

Four condition groups across the top — cold and moist, cold and dry, cool and dry, warm and moist — with the temperature and humidity band for each, because almost every storage failure is a crop sitting in the wrong one of those four.

Then seventeen crops in a single table: potatoes, carrots, beets, turnips and rutabagas, parsnips, celeriac and kohlrabi, late cabbage, leeks and celery, apples, pears, onions and shallots, garlic, acorn squash, butternut, hubbard and kabocha, pumpkins and sweet potatoes. Each with its temperature, its humidity, how long it keeps, and the one note that matters — keep apples away from every vegetable, never store potatoes below 40°F, do not cure acorn squash, never carry a pumpkin by the stem.

At the bottom, the eating order: what to use first and what to leave until February, which is the thing that turns a full cellar into a full winter rather than a pile of waste in January.
