Ingredients:



  • 750g (1.5lb) scallops
  • Salt and freshly ground pepper
  • 1.5 cups white wine
  • A little lemon juice
  • 90g (3oz) snow peas or 1 tablespoon chopped green onion
  • Thinly sliced green beans
  • 125g (4oz) butter, cut into pieces
  • A few chives to garnish


Method:


  1. Remove any beards from the scallops and wash them. Carefully remove the roes and lay them on paper towels to dry.
  2. Season the scallops with salt and pepper.
  3. Poach the scallops and roes in white wine and lemon juice for approximately 2 minutes. Remove and keep warm.
  4. String snow peas and drop them into boiling salted water for 1 minute. Drain. Do the same with beans if using.
  5. Add the green onion to the poaching liquid and reduce to about 1/2 cup.
  6. Over a gentle heat, add butter a little at a time, whisking it in to make a sauce with the consistency of pouring cream.
  7. Serve the scallops and roes with the white butter sauce, accompanied by crusty bread to mop up the delicious sauce.
