Taking a critical look at the ways food becomes memorialised as heritage, this session invited students to reflect on how “Mexican food” is constructed, curated, and circulated. Moving beyond the idea of cuisine as a natural or fixed tradition, the lecture explored how histories of power, nationalism, and global markets shape what is remembered, preserved, and legitimised as cultural identity.
