Malted Vanilla Oatmeal Scotchies

THIS FLAVOR. I'm sorry for yelling. This flavor is so good! I found inspiration from a batch of oatmeal cookies with butterscotch chips our neighbor gifted us. Here we have Malted Vanilla Bean ice cream with Brown-Butter Oatmeal Cookies and swirls of Brown-Butter Butterscotch Sauce. The malt and vanilla in the ice cream work so beautifully with the brown-butter, malt, and cinnamon in the cookies, and the dark brown sugar in the butterscotch sauce. It is perfectly salted, so the sweetness doesn't overpower your palette, leaving you wanting more never less. I find it to be a wonderful celebration of Autumn and I hope you can enjoy bowls-full in the most cozy setting possible!
