This boozy delight consists of luscious Irish cream ice cream, pieces of decadent Chocolate Guinness cake, and swirls of Salted Chocolate ganache. When I had my ice cream club in Seattle, this was one of my most popular creations. Back then, I had the great pleasure of using my friend Charlie’s - owner of Deep Sea Sugar and Salt Cake Shop - amazing 9lb Pound Chocolate cake. Here, I use Bailey’s Irish cream for the ice cream and Guinness beer for the cake to honor St. Patrick’s Day, but feel free to use your favorites.
