Deconstructed Strawberry Shortcake Bar

The Good Humor Strawberry Shortcake bar was one of my favorite treats to order from the ice cream truck when I was growing up. It featured sweet strawberries paired with vanilla ice cream and everyone's favorite strawberry cookie crumble on the outside. My version has all three components working in unison and one bite is sure to transport you back to a simpler, care-free time; when all you had to worry about was eating your ice cream before it melted and getting home before the street lights came on.
