What none of them can tell you is which of those places are actually worth your time - the ones you'll still be thinking about after you've left Japan, versus the ones that are technically vegan and forgettable.
I've spent the last 6 years eating my way through Tokyo's vegan scene - cafés tucked into side streets, tiny counters, izakaya doing incredible plant-based cooking, patisseries that could fool anyone. I've eaten at hundreds of places. Most were fine. Some were disappointing. A small number were the kind of meal you plan a trip around.
