Pesto is a flavorful condiment traditionally made of fresh basil, pine nuts, garlic, coarse salt, aged Parmesan cheese, and virgin olive oil. This popular pasta sauce, known as Pesto Genovese, originated in Italy and is attributed to the Ligurian city of Genoa. A vegan version would naturally exclude the Parmesan cheese. The authentic Pesto Genovese is made with mortar and pestle, but a food processor or a blender can easily be used to produce similar outcome.
