Four Weeks of Turkish Batch Cooking is twenty of my recipes arranged into four weeks that all work the same way. You shop once, cook two slow dishes on a Sunday afternoon, and the rest of the week looks after itself.
How a week works
Shop once. One list a week, organized by aisle, with the quantities already added up across the five recipes.
Cook on Sunday. A prep day timeline that runs from the moment you start, so you know what goes on first and what follows. About two hours, and most of it is waiting.
Eat all week. Two dishes go in the fridge and taste better for the wait. Two you cook fresh on the night in half an hour. One salad or meze goes with all of it.
Sixteen dinners over four weeks, and you cook on eight nights.

Week 1, stews and pilaf. Kuru Fasulye, Kuzu Güveç, Turkish rice, Çoban Salatası and tarhana soup.
Week 2, köfte and a stew that improves overnight. İnegöl Köfte, İzmir Köfte, Tas Kebabı, bulgur pilaf and cacık.
Week 3, chicken and quick sautés. Chicken shish you marinate and freeze in portions, tavuk sote, kıymalı makarna, haydari and Ezogelin soup.
Week 4, börek and vegetable mains. Two böreks from one filling session, frozen raw for lunchboxes and guests, plus imam bayıldı and kapuska.
