Crafted with reverence for Japan’s regional culinary heritage, our Chirimen Tsukudani is a sophisticated blend of the finest ingredients, time-honoured technique, and quiet elegance.


At its heart is chirimen—delicately sun-dried baby sardines sourced exclusively from Kyoto, known for their clean flavour, soft texture, and prized umami depth. These are gently simmered using the tsukudani method in our signature Itabashi-brewed shoyu, a handcrafted soy sauce aged to draw out deep caramel notes and a mellow salinity unique to our house style.


The slow-simmering process allows the chirimen to absorb every drop of the rich, savoury glaze, transforming into a glossy, flavour-packed delicacy with layers of umami, natural sweetness, and a lingering oceanic warmth. Each spoonful is a tribute to Kyoto's refined taste and the craftsmanship behind our shoyu tradition.
