Deconstructed Samoa Cookie

When I was a Girl Scout, my Mom nominated herself to be in charge of our troop’s cookie inventory because we had extra space in our garage. As a kid, it was amazing to be able to go downstairs anytime I wanted (and had the funds) to grab a box of any flavor I was craving in the moment. The Samoa cookies were always a favorite! There’s nothing better than coconut, caramel and chocolate on top of a buttery shortbread cookie. Here is my ode to this beloved flavor. Toasted coconut ice cream with pieces of homemade shortbread cookies, swirls of luscious salted caramel, milk chocolate flakes and more toasted coconut of course. When you get a bite with each component on your spoon, it will taste just like a Samoa cookie! A dream come true, really!
