A one-page kitchen chart for sourdough bakers. It shows how much water to add for 60–90% hydration and how your starter changes the real (true) hydration of the dough.

Table 1 gives water weights for 250 g, 500 g and 1,000 g of flour at 60, 65, 70, 75, 80, 85 and 90% hydration (for example, 70% of 500 g flour = 350 g water). Table 2 shows the true hydration once a 100% hydration starter is counted, at 10%, 20% and 30% starter. For example, 70% water plus 20% starter gives 72.7%. The page also has the formulas, a worked example and a quick way to hit a target true hydration.

The figures are standard baker's-percentage maths and were checked by calculation. The hydration ranges are general guidance, because flours vary. For your own numbers, in grams or ounces, use the free online calculator: https://inquisitive-sable-138df0.netlify.app

This is a free sample. The full 7-page Sourdough Baker's Cheat Sheets add hydration ranges by flour type, a starter feeding schedule, bulk fermentation and proofing times by temperature, gram/ounce/temperature conversions and a troubleshooting table. They cost $1 on Payhip: https://payhip.com/b/gW6Gk
