Unlike dutch-processed cocoa powder, raw cacao is made out of raw cacao beans that were not exposed to high temperatures. Raw cacao is full of live enzymes and antioxidants, and is considered to be a superfood. It is slightly more bitter and more acidic than the dutch-processed cocoa powder. It has a lighter color but a much stronger flavor.
