Your cooking oil was sold as soap before it was sold as food.
In 1911, the same hydrogenated cottonseed substance that Procter and Gamble had been turning into soap was bottled, given a new name (Crisco), and marketed to households as a clean, modern alternative to lard and butter. They paid doctors to recommend it. They sent free recipe books into people’s kitchens. Within twenty years, the fats human beings had cooked with for thousands of years had been replaced in almost every kitchen with a substance the same company was still using to make soap.
The same playbook was run with soybean oil, with corn oil, with rapeseed (a machinery lubricant in the war), with sunflower and safflower. Every one of them was waste, or a byproduct, or an industrial substance looking for a market. Your kitchen was the market they found.
We are now three generations into that experiment.

I am not a purist. I buy the organic rosti with sunflower oil sometimes because it is the rosti my children want. I eat the food my friend cooked for me. I eat the cake at the birthday party. The point is not to be afraid of food. The point is to know what you are eating, set up your daily kitchen well, and live the rest of your life eating with peace.
WHO I AM

I am a mother of three, all born at home, two by completely unassisted freebirth.
