Dark Chocolate Cake Recipe Card — Darker Version of the Viral London Cake, No Food Coloring
A grown-up dark chocolate cake: almost black, deeply chocolatey and not too sweet. Inspired by the viral London chocolate cake, this is my own darker version, colored only by Dutch-process cocoa, coffee and dark chocolate. No food coloring at all.
Inside: a tart cranberry & port layer that cuts through the richness.
WHAT YOU'LL LEARN
• A stable dark chocolate ganache cream: it holds clean, sharp layers without a cake ring, and it's not a buttercream.
• A moist, stable chocolate sponge that gets its dark color naturally, baked as one thin sheet and cut into three layers.
• A fruit layer set with agar that you can adapt: swap the cranberries for another tart berry or fruit you love.
• How to pipe the striped filling, so every slice shows clean lines of cream and ruby-red fruit.
