Sugar Cone Peanut Brittle

I thought I’d kick off National Ice Cream Month with this magical creation! In fact, this flavor combination came to me in a dream state. I woke up imagining both a sugar cone flavored ice cream mixed with a sweet and salty peanut brittle, and I had to get to work immediately. Turns out this is one heck of a yummy combination. The sweet sugar cone flavor matches perfectly with the buttery & salty brittle and here, neither element has to compete for the limelight. My favorite part is when the cold ice cream softens the hard brittle and turns it into an extra gooey toffee with peanuts. Trust me, this flavor is as dreamy as you are imagining.
