Sponge Cake

This is my go to base recipe for soaking cakes.

It's a simple recipe that yields an airy sponge cake that's ready to soak up a lot of syrup and flavour. I use it for forest cakes, tiramisu cakes, milk cakes and syrup cakes. All you really need is a decent electric mixer and time.
