Oatmeal Cookie Chunk

Throughout my twenties, my favorite Ben and Jerry’s flavor was their Oatmeal Cookie Chunk. It was brown sugar ice cream with cinnamon kissed oatmeal cookies and dark chocolate chunks. Here is my tribute to this cherished flavor, which is now sadly discontinued. The oatmeal cookies in my version are made with brown butter, giving them a rich, deep flavor with notes of toffee and caramel. I use thin milk chocolate flakes instead of dark chocolate chunks for a smoother finish and better mouthfeel. This combination is so delicious and a perfect homage to this very popular, much missed flavor!
