Beef and Broccoli Stir-Fry with Jasmine Rice


Ingredients

For the Stir-Fry:

  • 1 lb beef (such as flank steak or sirloin), thinly sliced against the grain
  • 4 cups broccoli florets
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

For the Stir-Fry Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ginger, grated
  • 2 teaspoons cornstarch
  • 1/2 cup water or beef broth

For the Rice:

  • 1 cup jasmine rice
  • 2 cups water
  • Pinch of salt

Instructions

Preparing the Rice:

  1. Rinse jasmine rice under cold water until water runs clear.
  2. In a pot, combine rice, 2 cups of water, and a pinch of salt. Bring to a boil.
  3. Reduce heat to low, cover, and simmer for 18-20 minutes, or until water is absorbed and rice is tender.
  4. Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.

Making the Stir-Fry:

  1. In a bowl, whisk together soy sauce, oyster sauce, brown sugar, ginger, cornstarch, and water/beef broth. Set aside.
  2. Heat vegetable oil and sesame oil in a large skillet or wok over high heat.
  3. Add beef in a single layer and sear for 1-2 minutes per side until browned. Remove beef from skillet and set aside.
  4. In the same skillet, add a bit more oil if needed, then add broccoli florets, onion, and garlic. Stir-fry for about 3-4 minutes, or until vegetables are tender but crisp.
  5. Return the beef to the skillet. Pour the stir-fry sauce over the top and toss to combine. Cook for another 1-2 minutes until the sauce thickens.
  6. Season with salt and pepper to taste.

Serve the beef and broccoli stir-fry over a bed of fluffy jasmine rice. This dish is a symphony of tender beef, crunchy broccoli, and savory sauce, all harmonized with the delicate fragrance of jasmine rice.
