  • 1 small red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)

Instructions

Preparing the Pulled Chicken:

  1. Place the chopped onion in the bottom of the slow cooker.
  2. Mix chili powder, cumin, smoked paprika, salt, and pepper. Rub this mixture all over the chicken.
  3. Place the chicken on top of the onions in the slow cooker. Add minced garlic and chicken broth.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is tender and shreds easily.
  5. Shred the chicken with two forks and let it soak in the cooking juices.

Making the Homemade Salsa:

  1. In a bowl, combine diced tomatoes, red onion, jalapeño, cilantro, and lime juice.
  2. Season with salt to taste.
  3. Let the salsa sit for about 30 minutes to allow the flavors to meld.

Assembling the Tacos:

  1. Warm the corn tortillas in a dry skillet or in the microwave.
  2. Fill each tortilla with the pulled chicken and top with homemade salsa.
