Healthy, Hearty, Sweet Potato Fudge Brownies

  • 1/2 tsp baking soda
  • A pinch of salt
  • 1 egg (optional)
  • Optional: 1/4 cup dark chocolate chips or nuts

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Peel and chop the sweet potato, then bake until soft (35-50 minutes). Mash and cool slightly.
  3. Mix mashed sweet potato, almond butter, cocoa powder, maple syrup, vanilla extract, baking soda, and salt in a bowl.
  4. Fold in chocolate chips or nuts if desired.
  5. Pour batter into a lined or greased 8x8-inch baking pan.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Cool, cut into squares, and enjoy!
