Simple Berry Cream Layer Cake

Hello Lovelies! Here's a cozy cottage-style berry cake with soft vanilla layers and fresh berries for you today.


This berry cream cake is soft, light, and perfect for spring and summer baking. Two fluffy white cake layers are filled with sweet cream and topped with fresh strawberries and blueberries for a beautiful, simple dessert.


It looks impressive but is actually very beginner friendly. The cake layers are easy to make, and the cream filling comes together in just a few minutes.

Ingredients

For the White Cake Layers

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter (softened)
  • 1 ½ cups sugar
  • 3 large egg whites
  • 1 tablespoon vanilla extract
  • 1 cup milk


For the Cream Filling & Frosting

  • 1 ½ cups heavy whipping cream
  • ⅓ cup powdered sugar
  • 1 teaspoon vanilla extract


Berry Topping

  • 1 cup fresh strawberries (sliced)
  • ¾ cup fresh blueberries


Instructions

Prepare the Cake Pans

Preheat your oven to 350°F (175°C).

Grease two 8-inch round cake pans and line the bottoms with parchment paper.


Mix the Dry Ingredients

In a bowl, whisk together:

  • flour
  • baking powder
  • salt

Set aside.


Cream Butter and Sugar

In a large mixing bowl, beat the butter and sugar together until light and fluffy (about 2–3 minutes).

Add the egg whites and vanilla, mixing until smooth.


Add Milk and Flour

Add the flour mixture and milk in stages:

  1. Add half the flour mixture
  2. Add the milk
  3. Add the remaining flour mixture

Mix gently until just combined.

Do not overmix.


Bake the Cake Layers

Divide the batter evenly between the two cake pans.

Bake for 22–26 minutes, or until a toothpick inserted in the center comes out clean.

Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.


Make the Cream Filling

In a cold bowl, whip together:

  • heavy cream
  • powdered sugar
  • vanilla extract

Beat until soft peaks form.

The cream should be light, fluffy, and spreadable.


Assemble the Cake

Place one cake layer on a serving plate.

Spread a thick layer of whipped cream over the top.

Add a few sliced strawberries and blueberries.

Place the second cake layer on top.

Spread more whipped cream over the top of the cake.


Add the Berry Garnish

Decorate the top with:

  • fresh strawberries
  • blueberries

You can pile them in the center for a rustic cottage-style cake look.

Make sure the cake layers are completely cool before adding cream.

Use fresh berries for the best flavor.

Chill the cake for 30 minutes before slicing so the cream sets nicely.
