Glazed Lemon Loaf Cake

This soft lemon loaf is bright, buttery, and perfectly sweet with the dreamiest lemon glaze on top.

Ingredients

For the loaf:

  • 1 cup sugar
  • zest of 2 lemons
  • 1/2 cup melted butter
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 tablespoons fresh lemon juice
  • 1/4 cup sour cream
  • 1/4 cup milk
  • 1 2/3 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

For the glaze:

  • 1 1/2 cups powdered sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon milk or cream
  • 1 tablespoon melted butter
  • pinch of salt
  • 1 teaspoon vanilla

Instructions

  1. Preheat your oven to 350°F and grease or line a loaf pan with parchment paper.
  2. In a mixing bowl, combine the sugar and lemon zest. Rub the zest into the sugar with your fingers for a minute until it smells super fragrant and citrusy.
  3. Add the melted butter and mix well. Then whisk in the eggs and vanilla until smooth.
  4. Stir in the sour cream, milk, and lemon juice.
  5. Add the flour, baking powder, and salt. Mix until just combined — don’t overmix.
  6. Pour the batter into your prepared loaf pan and bake for about 45–60 minutes, or until a knife or toothpick comes out mostly clean.
  7. While the loaf cools, make the glaze by whisking together all of the glaze ingredients until smooth and pourable.
  8. Once the loaf has cooled, drizzle the glaze over the top and let it set for a few minutes before slicing.

It’s extra good slightly warm with a little salted butter on top
