This soft lemon loaf is bright, buttery, and perfectly sweet with the dreamiest lemon glaze on top.
Ingredients
For the loaf:
- 1 cup sugar
- zest of 2 lemons
- 1/2 cup melted butter
- 2 eggs
- 1 teaspoon vanilla
- 2 tablespoons fresh lemon juice
- 1/4 cup sour cream
- 1/4 cup milk
- 1 2/3 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
For the glaze:
- 1 1/2 cups powdered sugar
- 1 tablespoon lemon juice
- 1 tablespoon milk or cream
- 1 tablespoon melted butter
- pinch of salt
- 1 teaspoon vanilla
Instructions
- Preheat your oven to 350°F and grease or line a loaf pan with parchment paper.
- In a mixing bowl, combine the sugar and lemon zest. Rub the zest into the sugar with your fingers for a minute until it smells super fragrant and citrusy.
- Add the melted butter and mix well. Then whisk in the eggs and vanilla until smooth.
- Stir in the sour cream, milk, and lemon juice.
- Add the flour, baking powder, and salt. Mix until just combined — don’t overmix.
- Pour the batter into your prepared loaf pan and bake for about 45–60 minutes, or until a knife or toothpick comes out mostly clean.
- While the loaf cools, make the glaze by whisking together all of the glaze ingredients until smooth and pourable.
- Once the loaf has cooled, drizzle the glaze over the top and let it set for a few minutes before slicing.
It’s extra good slightly warm with a little salted butter on top
