I stumbled upon this masterpiece! The other night I had no idea what to cook for dinner. I looked in the kitchen and evaluated the ingredients I had on hand and just started cooking. I’ve been on a meatball kick lately and had some ground chicken so I started there and added some common cooking staples. Next I saw the bacon and immediately said CHICKEN BACON RANCH!!! 30 minutes later dinner was done and not a single noodle was left. Needless to say this meal will be in our menu rotation. You all have to try it out. It was SEAUX GOOD
INGREDIENTS
Ground chicken (1 lb)
Bacon (9 strips)
Rotini (10 oz)
Butter (4 tbsp)
Garlic (2 cloves)
Half & Half (2 cups)
Salt (1/2 - 1 tbsp)
Black pepper (1 tsp)
Parmesan cheese (1/2 cups)
Lemon (1/2)
FILLING
Parsley (1/4 cup)
Red onion (1/4)
Green onion (2 stalks)
Egg (1)
All purpose seasoning (1 tbsp)
Dry ranch seasoning (3 tbsp)
Seasoned breadcrumbs (1/2 cup)
DIRECTIONS
PREP: Mince parsley, red onion, green onion, garlic, cut bacon into small pieces; set aside
- In a large pot boil pasta of choice until fully cooked, drain and set aside
- In a large pan, cook bacon until crispy, remove and set aside.
- To a large bowl, combine ground chicken, parsley, red onion, green onion, and egg.
- Once fully incorporated add all purpose and ranch seasoning.
- Fold in the panko breadcrumbs a little at a time until incorporated with a thick consistency.
- Form meat mixture into 1 inch balls and set aside
- Remove the majority of grease bacon grease.
- Add meatballs to the pan, on medium heat, cook meatballs for 3–4 minutes on each sides. Remove meatballs and set aside
- To the same pan on low heat, add butter once melted and garlic and stir constantly until fragrant.
- Add half and half and stir until ingreadients are incorporated.
- Season with salt, pepper, and add in lemon juice.
- Add in Parmesan cheese and stir constantly until sauce thickens
- Add in pasta and stir until the pasta is coated.
- Top pasta with meatballs and green onions.
- Enjoy
Notes:
- Always use fresh ingredients (parsley, garlic, lemon juice) the quality dreastically changes the flavor.
- Use any all purpose seasoning, in my video I used Kinders the blend
- You can use your pasta of choice.
- For maximum flavor, mix the ground chicken and filling with the exception of the breadcrumbs and allow to marinate for at least 20 minutes.
- When cooking your meatballs, you can cut one (I suggest the largest one) in half to ensure they are fully cooked.
- Once I remove the meatballs I wrap them in foil. it allows them to stay moist.
- Once all your sauce ingredients are combined, make sure you taste and add more seasoning if needed
- If you want more sauce add more half and half and adust seasonings.
