Chimichuri always reminds me of summer soooo vibrant and flavorful!!! I know some people do not like cilantro and you can substitute it for parsley. You can use this as an addition to a pasta dish, a dip, a flavorful marinade but the best way is spreading over grilled meats.
This is one of those recipes that you add as you go! You might not be a huge oregano fan so you might add a little less or if youre like me I love garlic and always add more. I’ve even included onions and sometimes use a lemon when I don’t have limes.
Ingredients
- 1 bunch of cilantro (1/2 cup)
- 1 bunch of parsley (1 cup)
- 1 tbsp oregano
- 1 bulb of garlic (minced) (2 tsp)
- 1/3 cup neutral oil
- 2 tbsp Red wine vinegar
- 1 1/2 tsp red pepper flakes
- 1 tsp salt
- 1 tsp black pepper
- Juice of 1 lime (2 tbs)
Directions
- Roughly chop parsley, add to blender
- Roughly chop cilantro, add to blender
- Mince garlic, add to blender
- Add oregano, red pepper flakes, salt, pepper, red wine vinegar, and juice of lemon to the blender.
- Blend until ingredients are incorporated (30 seconds)
- Add in oil and blend until emulsified
