This soup has instantly become one of my favorite soups. It is one of those soups you can eat all year round. It gives all the vibes of the traditional wonton soup but much easier and weeknight friendly. So delicious and flavorful it's a must try!!
Ingredients:
BROTH
- Olive oil (2 tbsp)
- White onion (1 large)
- Ginger (2-4 knobs)
- Garlic (6 whole cloves)
- Chicken broth (10 cups)
- Soy sauce (1 tbsp)
- Rice vinegar (2 tsp)
- Sesame oil (2 tsp)
WONTON FILLING
- Ground sausage (14 oz)
- Panko breadcrumbs (1/2 cup)
- Eggs (1)
- Green onion (1 cup)
- Dark Soy sauce (1 tbsp)
- Rice vinegar (2 tsp)
- Salt (pinch)
- Black pepper (1/2 tsp)
- Sugar (1/2 tsp)
ADD IN's
- 4 baby bok choy
- Wonton wrappers
- Green onion
Prep:
- Chop onion in large 1-inch squares
- Cut ginger in large chunks
- Chop green onions
- Rough chop bok choy
- Cut wonton wrappers into fours (triangle shape)
Directions:
- To a large pot, sautéed onions, cut, garlic, and ginger on medium heat for four minutes
- Add chicken broth
- Bring to a lightbulb cover and simmer for 30 minutes
- Strain onion, ginger, and garlic, keep onions and set aside.
- While simmering combine all filling ingredients with the exception of breadcrumbs.
- Once fully incorporated fold in breadcrumbs until the filling reaches a firm consistency.
- To the pot drop spoon size pieces of fill into the broth cover and simmer for 15 minutes.
- Adjust seasonings to taste
- Add onions back in.
- Add in bok choy and cook for an additional 3 to 4 minutes until tender
- Add in wonton wrappers and cook for an additional 3 minutes or until tender
- Serve immediately. (if making ahead do not add wonton wrappers until you’re ready to serve)
Tips:
- Garnishes include green onion, chili oil, and or mushrooms.
- Pour soup over ramen to make a more filling dish.
- Add in addition, chicken broth if needed
- You can substitute dark soy for regular
- You can use any protein of your choice (ground chicken and/or shrimp are good options)
- Instead of purchasing ready-made broth, you can use chicken Boullion
- Cut wonton wrappers into smaller pieces (even strips) for better ratio. The first time I made the soup I only cut them in half, and they were way to big.
