Todd Stream Cameron is widely recognised for the role he played in the early stage development of Australian Spa Cuisine, through his position as head chef at one of the country’s leading internationally awarded retreats and spas: Gaia Retreat and Spa owned by Olivia Newton John and co. Todd was the head chef of Gaia from its inception and continued to lead the team for five years.
Based in Mullumbimby on the NSW north coast Todd has always been passionate about nutrition and personal wellness.
At just 21 years old, Todd was recommended for a cheffing role at Greece’s famed Yoga Plus retreat; a recommendation that was made based on a single meal he had prepared for a travelling yoga teacher from Yoga Plus.
After having spent many years living his passion whilst moving across the globe and further developing his love of health-enhancing, organic foods; Todd began to share his culinary experiences in a more focused and influential way.
He has worked at the fine dining restaurant, Nautilus, in Port Douglas as well as being the head chef for Hannaford’s Special Events and sister company Flames in the Forest; creating themed dining experiences in the rainforests of northern Australia.
Todd is also the founder of True Nature Cuisine - a highly sought after catering company based in the Northern Rivers.
In 2017 he became a self-published author, with the release of The Activated Grain Method.
For Todd, The Activated Grain method represents a slight departure from the former cheffing roles, as he moves towards a more educationally focused chapter of his career.
Todd now trains local and international chefs, and is creating a community around the cooking method. The Activated Grain Community can be found on facebook.
Todd believes that by providing education on the nutritional benefits of consuming activated grains (or delicious treats made from activated grains), and by teaching The Activated Grain Method to both health and wellbeing focused consumers, as well as food industry professionals; the concept can make a significant contribution to the overall health and wellbeing of our bodies.
