What began as a love for baking, being outdoors, and ice cream, turned into The Ice Cream Bike; A mobile ice cream sandwich catering business I launched in the spring of 2024. After being diagnosed with celiac disease, I became passionate about creating gluten-free treats that didn’t feel like a compromise. Through a whole lot of trial (and error!), I developed gluten-free cookie recipes that surprised even the most skeptical eaters, and my famous ice cream cookie sandwich was born!

Over time, people have started begging me for my cookie recipes, and while I'm not ready to share them all just yet, I hope this page is enough to curb your cookie cravings for now! This is a way to share the recipes behind the sandwiches, the heart of it all, and I've even begun to include some extra special non-ice cream sandwich cookie recipes! Of course, this is also a great opportunity for me to give back to the celiac community who have exceeded my expectations in support of my business. $1 from every purchase is donated to The Celiac Disease Foundation to support research, education, and advocacy. The rest goes right back into the Ice Cream Bike biz so I can continue to provide you all with delicious treats!
