I’m Chef Ashford Clarke, based in Falmouth, Massachusetts. I work two jobs, often through twelve-hour shifts and 1 a.m. pickups in the kitchen. Cooking has always demanded endurance from me, but an old injury in my right hand forced me to learn something even greater: how to adapt. I learned to prepare real, flavorful food with one hand—and refused to let a limitation take away something I love. I’m Jamaican, so flavor is more than an ingredient in my cooking; it is part of my heritage. Brown stew, escovitch, oxtail—these are the dishes that remind me of home, family, and the food I grew up eating. But when my doctor told me I needed to cut back on salt, I faced a challenge: how do you change the recipes you were raised on without losing the soul that made you love them? So I went back into the kitchen and rebuilt my mother’s recipes. I took out the Maggi, reduced the salt, and learned how to draw bold flavor from herbs, spices, aromatics, and technique instead. I discovered that eating differently did not have to mean eating without culture, comfort, or flavor. This book is not filled with food I created just for photographs.
