Hi, I’m Tim O’Connor, co-owner of Boloney’s Sandwich Shop and author of this sandwich and salad recipe e-book.

Roberta Rapata and I opened Boloney’s on October 1, 1981, with just six items on the menu. Over time, we added more than thirty others, each with its own personality.

It took a few months for the shop to get going. During those quiet early days, we’d experiment with different combinations of meats and cheeses, then dream up whimsical names for our creations. Some earned a permanent place on the menu; others appeared as weekly specials from time to time.

Within six months, we had lines of people waiting out the door. We added catering, serving most of the realtors’ open houses in the area and providing food for local car dealership showrooms every week.

But the most important part of our story is that we had FUN doing it together! It was truly a wonderful life.
