Fermented Tepache with Honey

Tepache

Tepache originally has been said to be a sacred drink used in the early Mexican and Mayan cultures. They used various spices depending on how they wanted to use the beverage.

Today, I see it as a great way for any beginner to learn to ferment. This beverage is perfect to beat that summer heat with. I have attached the video below where I walk you through step by step, on my take on this wonderful drink. The original recipe does use brown sugar but I try to use honey instead when I can. There is no bug or culture required to make this.. literally making this ferment the easiest beverage to make ever! In my book I explain great places to ferment but I'll quickly address here. When fermenting this keep out of direct sunlight and away from a stove. We certainly never want to ferment anything in our washer rooms due to humidity and moisture that can cause mold to grow. If mold happens to grow in your jar please discard. Mold is not a healthy bacteria and it is important to note with wild fermentation you never actually see the bacteria. You will see what the Lactobacillus bacteria by way of bubbles. This is a great way to introduce your body to helpful bacterias that promote immunity.

Please know fermented foods are not intended to be like a pill. Instead we must incorpate a healthy lifestyle in combination with probiotic rich food for lasting results on our immunity and longevity! So let's get to it. Here is what you will need but please note exact measurements is NOT necessary for this! Get WILD..get CREATIVE...stick my my recipe or add in other herbs and spices!

For My Recipe You will need:

1 to 2 mason jars- quart size with lids

Cinnamon sticks

Cloves

1 whole Pineapple

Distilled or Spring water.. well water is even acceptable

Raw Honey

Let ferment on the counter for about 6 days. Strain and put into a bottle and ferment for another 2 days. For more of a instruction, please see video below....
